Pinot Grigio Emilia IGP

Denomination: Protected Geographical Indication, white wine variety

Soil Type: Clayey Compact

TRANING SYSTEM: Guyot

Harvest: Harvesting is done manually in early September

Yield per Hectare: 100 quintals/hectare

Vinification: Maceration is carried out in a cold press, then undergoes slow fermentation in stainless steel tanks at a controlled temperature of 16-18°C maximum. After fermentation, a long series of battonage takes place and then it is bottled.

Characteristics: Straw-yellow wine with greenish highlights. On the nose we are able to detect notes of lemon, yellow apple and white peach. The presence of more fruit indicates to us that the wine grew in a Mediterranean climate. This is an elegant wine with moderate acidity.

Pairings: Pinot Grigio, with its refreshing acidity, pairs very well with fresh vegetables, raw fish and light meals. Fish and seafood are the ultimate pairing with Pinot Gris. As for meats, fish such as sea bass, perch, sole, trout, cod, redfish, mussels, clams, oysters, white meat such as chicken and turkey, and spiced pork and duck meat. As for cheeses, semi-soft ones are recommended, preferably cow or sheep, or cheeses such as Grana Padano.
